Easy Recipes for Homemakers: Crockpot Chicken Chowder
Our Easy Recipes for Homemakers series continues with our newest creation: the Crockpot Chicken Chowder recipe. Spring is approaching, which means time is running out to make heavy winter soups like this hearty crockpot chicken chowder soup. We’ll be switching to lighter recipes soon, so work these winter favorites into your weekly menu plan while there’s still time!
Easy crockpot recipes are perfect for working moms to throw together in the morning (or even setup your crockpot dinner the night before) and set it to cook while you’re away from home. There’s nothing quite as relieving as coming home after a busy day, only to find your hot delicious dinner waiting for you already cooked – and all you have to do is eat it!
We hope you’re enjoying the Easy Recipes for Homemakers series. Our goal is that cooks with all levels of cooking training, experience, or practice will be able to put these recipes together with the simple step by step instructions.
Ingredients
- 2-3 cooked chicken breasts
- 1/2 cup heavy whipping cream
- 2 (14.5 oz.) cans of chicken broth
- 1 (26 oz.) can of cream of chicken soup
- Water as needed
- 1/2 cup of barley
- 1/2 cup brown rice
- 1/2 cup white rice
- 1 small bag of frozen okra
- 1 (15 oz.) can of corn
- 4 medium potatoes
- Salt to taste
Directions
1. Cook chicken breasts by your favorite method, then cut into chunks. (Try baking a family size package of chicken all at once, then you’ll have precooked chicken ready for all recipes for the week’s menu.)
2. Peel, wash and slice potatoes into bite-sized chunks.
3. In the crock pot, combine up all above ingredients (except water) and stir well. Add enough water to make sure all ingredients are covered in liquid. This will allow the grains to absorb enough liquid while cooking.
4. Cook on low in the crock pot for 5 to 6 hours. Make sure not to lift the crockpot lid during cooking unless absolutely necessary.
5. Serve hot with homemade biscuits.
